We have a wonderful time in this class, and food safety is of utmost importance.  It’s fun to make new friends who like to can, as well.  Many of our returning Masters Class students make group plans to can their produce, pick fruit, or go on excursions to farms and markets.

Our society -- so busy with high-speed internet, Lear jets, fast-food restaurants, and speed dating – has all but forgotten the gentle joys of small-batch canning for our families.

Do you need a review of all your grandmother taught you?  Or is canning something you never got around to learning, even though it sounds intriguing?  Then sign up for a canning class in our Summer Kitchen!  In this class, you will:

• Learn water bath techniques for high acid fruits
• Learn pressure canning techniques for low acid vegetables
• Hand-pour your own jam, seal it, and process it
• Develop a network of friends who are having fun with canning
• Take home a tradition you can share with friends and family!
• Class size is limited to 12 to allow hands-on training.  The sessions cost $80, which includes all materials or $150 for 2 people, includes lunch.  Please bring an apron or clothes that are O.K. to stain a bit!

For over 10 years Sonya taught at local culinary schools (Dorothy Lane, CooksWares) and the Lebanon YMCA.  But our new Summer Kitchen enables her to offer you a more comprehensive course using all the right equipment. She is licensed by the State of Ohio Department of Agriculture as a Commercial Canner, with a certification from the Food Institute in Thermal Process Control.  The techniques you will learn will enable you to can safely and confidently.
